  1. Stir together cumin, cayenne, tumeric, coriander, 1 teaspoon salt and pepper into a bowl. Rub mixture onto chicken.
  2. Heat 1 Tablespoon coconut oil in a large skillet over medium heat until it shimmers. Cook chicken, turning once, until browned, approximately 6-8 minutes per side. Remove from heat, place on plate.
  3. Heat remaining coconut oil in a skillet until it shimmers. Cook onion, ginger, jalepenos and gralic until tomatoes are softened, about 5 minutes. Stir in coconut milk and simmer until sauce thickens, or about 5 minutes.
  4. Add chicken and any juices that have accumulated from plate to skillet. Reduce heat to low and cook until chicken is just cooked through, about 5 minutes.
  5. Transfer to plate and sprinkle with parsley.
