  1. In a medium bowl, mix ground bison, onion, cheddar cheese, and jalepeno
  2. Lay flat six pieces of bacon, spread bison mixture flat with one inch of bacon visible on either side.
  3. Tuck ends of bacon, roll mixture lengthwise, and slice with chefs knife into six pieces or more. Place on oven safe pan.
  4. Bake for 25 minutes for medium rare meat. Add cook time to desired temperature of bison or until bacon is cooked. Let cool five minutes.
  5. Place on serving dish and drizzle Siracha and ketchup to taste. Serve warm.
